For 1 kg of flour you should use 4 litres of water and two tablespoons of coarse salt. Add the salt in the cold water and before it begins boiling add the flour stirring quickly to avoid lumps. At the end of cooking time (about 40 minutes) pour the polenta on a wooden board.
