Organic Umeboshi Pure
This contains the Ryujin Umeboshi already reduced to a puree, for faster use.
Gathered still green are put to ferment in salt in wooden barrels for a month, along with shiso leaves that donate their aroma and flavour. Are then removed from the barrels and placed to dry in the sun for a week, thus acquiring the characteristic wrinkled appearance. Putted again in the barrels to mature for another year, they become valuable Umeboshi.

Usde instead of salt,in cooking cereals and vegetables or to prepare sauces. Macrobiotic sauce: mix well 1 / 2 teaspoon of umeboshi puree, 2 tablespoons tahin (sesame), a little chopped onion. Add 1 / 2 cup water and mix again. Used to flavor cooked vegetables and salads.
