Ingredients for 2 people

200 g fine rice noodles
200 g natural seitan
1 carrot
½ onion
Gomasio with kombu seaweed and nori, to taste
Tamari to taste
Extra virgin olive oil
1 tsp coarse sea salt
1 tsp chopped parsley
1 tsp flax seeds

cc = cucchiaino
pz = pizzico


Cook the rice noodles in boiling salted water for two minutes, then drain immediately and rinse in cold water to eliminate the starch and prevent sticking. Finely chop the carrot and onion, and sweat for a minute in a frying pan with a little oil. Add the seitan cut into small cubes, and cook for a few minutes. Moisten with tamari. Toss the noodles in the prepared sauce and season with oil, gomasio, flax seeds and fresh parsley.
