2 cups couscous
5 cups apple juice
A pinch of sea salt
Ingredients for the apples in kuzu sauce:
4 golden delicious apples
A pinch of salt
Apple juice to taste
1 tsp kuzu dissolved in two tbsp cold water

Preparing the base

Wash the couscous and place in a serving dish. Bring the apple juice to the boil with a pinch of salt and boil for two minutes. Pour the boiling liquid over the couscous, cover and allow to stand for a few minutes. Then press the couscous down to make an even base for the tart.

Preparing the sauce

Peel and core the apples and cut into small pieces. Put them into a pan with two fingers of apple juice and a pinch of salt and bring to the boil. Lower the heat to minimum and cook until the apples are tender. Pour over the kuzu dissolved in cold water and stir constantly until the mixture thickens. Arrange the apples on the couscous base and allow to cool. When the tart is cool, sprinkle with cinnamon.
