Ingredients for 4 people

  • 2 cups chickpeas, cooked and drained
  • 2 tbsp tahini
  • 1 onion, grated
  • 1 tbsp umeboshi pulp (or 2 umeboshi plums)
  • 1 tbsp chives, chopped
  • Cooking water as required

Cc = cucchiaio
cc = cucchiaino pz = pizzico


Put all the ingredients in a food processor and purée, adding cooking water if necessary. Transfer the hummus to a bowl and mix in the chives. Garnish with parsley and serve.
Note: excellent as an appetiser, served with tortillas, crackers or crostini.
