Tekka is a very popular condiment in Japan: Its name means ""iron root."" It is a very special sauce with a strong and intense taste.

Tekka is a powder obtained from miso and roots (carrots, burdock, lotus and ginger) from the particular and intense flavour. All the ingredients are cooked for about 6 hours, stirring continuously.
