Il Mirin è un dolcissimo vino di riso. Si usa per arrotondare il sapore di piatti di pesce o di seitan: aggiungetene qualche goccia in cottura oer un effetto assolutamente speciale, come fareste con il vino.
The traditional fermentation of Mirin is a process that takes about nine months to be complete, in agreement with the going by of the seasons. Only the slow fermentation can give birth to this sweet condiment with amber colour that gives a touch of perfection, even to the simplest dishes.
