Lavate i fagioli mung e lasciateli in ammollo in acqua fredda per 6-8 ore. Scolateli, lavateli con acqua corrente e metteteli in una pentola grande con circa 7-8 bicchieri di acqua (1 litro e mezzo circa). Portate ad ebollizione e cuocete a fuoco basso per 90 minuti circa. Salate a fine cottura e condite a piacere con olio, salsa di soia o gomasio.
