SHIRATAKI WITH MAITAKE AND SEITAN

Ingredients for 2 people

150 g shirataki (Japanese noodles)
10 g maitake (Japanese dried mushrooms)
100 g natural seitan
1 carrot
1 spring onion
Gomasio to taste
Tamari to taste
2 tbsp extra virgin olive oil
1 tsp coarse sea salt

Preparation

Soak the maitake mushrooms for about ten minutes. In the meantime, rinse the shirataki noodles under running water and cook them for two minutes in salted water. Heat a little oil in a frying pan and sautéed the finely chopped spring onion, the carrot cut into strips and the seitan in small cubes, then moisten with tamari. Squeeze the water out of the mushrooms and chop them coarsely, then add to the pan. Cook for a few minutes. Toss the noodles in the seitan and vegetable sauce and finish with gomasio and a drizzle of olive oil. For extra flavour, add tamari to taste.
