LENTIL HAMBURGERS

Ingredients

Here’s what you need to make 4 large hamburgers or a dozen rissoles:

• a large cup of cooked and drained lentils
• 1 tablespoon of lemon juice
• 1 slice of onion
• a handful of cooked vegetables of your choice (cabbage, broccoli, cauliflower…)
• salt and extra virgin olive oil

Preparation

Sweat the onion in the oil then put all the ingredients into a food processor. Blend, but not too much, so that the mixture does not become too liquid.
You can also leave some of the lentils whole if you like.
Now put the mixture in the fridge for a few hours (this makes the mixture firmer).
Using this method means we don’t need to add egg.
Then you just need to shape the hamburgers or rissoles with your hands and cook in the oven at 180 degrees for 30 minutes.

Tip: when the hamburgers/rissoles are nearly done, turn them over to ensure both sides are well cooked.
